GIVEAWAY: My Weekend Breakfast was a Hit with Eggland's Best Eggs - ENDS 4/19 (CLOSED)

I'm eating more healthy with the help of Eggland's Best Eggs....

One of my goals for 2013 is to eat more healthy.  I already love to exercise by riding my stationary bike and walking.  But healthy eating is something that I have been struggling with lately since I have not met a potato chip that I did not like.

So when I was contacted by Eggland's Best to try out some healthy breakfast recipes that use Eggland's Best eggs, I was more than willing to give them a try because I am getting a little tired of just having cereal for breakfast.

Eggland's Best website is full of great information and recipes to help people with better nutritional choices.  One of the things that I learned on the website is that all eggs are not created equal.

According to Eggland's Best, when compared to ordinary eggs, Eggland’s Best eggs contain:
· 10 times more vitamin E
· Double the amount of omega-3’s
· Twice the amount of vitamin D
· 3 times more vitamin B12
· 25% less saturated fat
· 38% more lutein

Nutrition is great, but it's the taste that counts with me. So I decided to try out two of the recipes on the Eggland's Best website - the Breakfast Burrito and the Sunny Side Breakfast Pizza - don't they both sound yummy?


Eggland's Best was gracious enough to provide me with a gift card so that I could buy all the ingredients for my breakfast choices. They also provided me with FREE product coupons for Eggland's Best Eggs. My frig was now stocked with great nutritional foods so that I could try out the following Eggland's Best recipes for myself....

Breakfast Burrito

Ingredients
6 whole wheat tortillas
6 Eggland's Best eggs (large)
1 red bell pepper, diced
1/2 yellow onion, diced
1 package of Turkey Sausage Crumbles
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup low-fat cheddar cheese, shredded
1/4 cup sour cream, fat-free
1/2 cup salsa

Preparation
- Set oven temperature to 200 degrees F; arrange tortillas on a baking sheet and warm in the oven until ready to serve.

- In a large skillet sprayed with non-stick olive oil spray, saute diced onion & bell peppers until soft. Brown the sausage turkey crumbles and set aside.

- In a large bowl, mix eggs with salt & pepper; pour into skillet and stir, cooking until eggs are firmly set. Remove from heat when cooked through.

- To assemble your burritos, spread a thin layer of sour cream on each tortilla and top with even amounts of all ingredients: eggs, peppers & onions, sausage, cheddar cheese, and salsa. Roll and serve.

Sunny Side Breakfast Pizza

Ingredients
1 can refrigerated pizza crust, or fresh pizza dough
1 package of Turkey Sausage Crumbles (I like meat on my pizza)
2 tomatoes, thinly sliced
1 cup shredded mozzarella cheese, low-fat
1/2 cup spinach leaves, chopped
6-8 basil leaves, chopped
4 Eggland's Best eggs
2 tablespoons fresh parsley, chopped
1 tablespoon oregano
1/2 teaspoon salt
1/2 teaspoon pepper

Preparation
- Preheat oven to 400 degrees F.
- Roll out pizza crust on a lightly floured pizza pan; bake in oven for 5-7 minutes or until dough begins to slightly brown.

- Meanwhile, slice tomatoes very thin; wash and chop fresh spinach leaves; combine salt, pepper, parsley, oregano and set aside.
- Wash basil leaves and pat dry; cut into thin strips and set aside.

- Remove dough from oven; spread tomatoes over dough; layer spinach over tomatoes, sprinkle evenly with spice mixture; spread cheese evenly over pizza.

- Gently crack 1 egg into a small bowl and slide onto pizza; repeat with all eggs; sprinkle basil on top.
- Reduce oven temperature to 375 degree, and bake for 8-10 minutes, or until eggs are set.

Everything was fast and easy to make and I and my family might be cooking breakfast more often on the weekends after this experience.

It was wonderful to eat a breakfast where everything tasted great and was great for me. Thanks Eggland's Best for making my family's weekend breakfast a hit.
